The military training scenes were all shot at Ft. Knox, KY. My father used to work there and was on the set most days when they were shooting. The taxi cab scene on the bridge is actually on the 2nd Street bridge in Louisville, KY crossing the Ohio river. In the background you a the Belknap building, which was imploded in a big local tv event back around 1992, on the left. Finally the "prison" was actually an old Jim Beam bourbon warehouse that crew used and blew apart.

An Ivan Reitman prank to have some of the characters drag Warren Oates' character into the mud during the obstacle course scene, led to Oates chipping a tooth and Reitman getting a tongue lashing from Oates.
Thanks to Tom Evans
The last scene in Stripes with the airplanes on the runway was filmed at Norton AFB (which is what it looks like) is located near San Bernadino and therefore not west of Burbank but east of Burbank
