Originally all the bottle tossing that was done in the film, was NOT scripted but in fact done last minute because the actors wanted to "feel like real bartenders"

Brian and Doug's bartending skills are referred to as "flair bartending". John Bandy, a flair bartender, trained Tom Cruise for the film.
