Vincent Benedict's (Danny DeVito) house is at 323 11th Street in Santa Monica, CA [Thanks to Dee83]
The street they drove down when they first got into New Mexico (narrow, with colorful houses) is Ledoux Street in Taos, just West of the Plaza.
The roadside cafe, with the beautiful valley in the background is on Hwy 150 (the road to Taos Ski Valley), Northeast of Taos, actually in Valdez/Arroyo Seco. It had been a gas station years ago, converted by film crew to 'cafe' for the movie. The valley in the background is the entrance to Taos Ski Valley.
By the way, poetic license... They cross the Rio Grande Gorge bridge 'on the way' to New Mexico. It is actually just 10 miles or so Northwest of Taos.
The "colony in Santa Fe" is actually the Mabel Dodge Luhan House

The Plaza where the Twins go shopping for Arnold's new clothes in in the Old Town Plaza of Santa Fe. When they walk in the street in their new suits, the St Francis Catholic Church (East end of the Plaza) is their backdrop. The La Fonda hotel is on the right (stage left).
