During the battle against the Imperial Walkers, when Luke and a couple of the other rebel fighters are flying past the Walkers, you can actually see the Walkers right through Luke and the others. Watch the Walkers in the background and you can see that Luke is transparent during some of these shots.
There's a scene at the Hoth rebel base where Han and Leia are talking in the hallway. Leia says, "I don't know what you're talking about," and Han replies, "You probably wouldn't." And then he walks down the hall and turns the corner. If you watch closely, you can see that as soon as Han turns the corner, he immediately spins around and starts to walk back, as if he wants to go back and do the scene over again.

When the Stormtroopers push princess Leia into the cell in cloud city, she is wearing a completely different outfit from the one she was wearing when she was taken captive.

In a scene immediately following Vader telling his men to "set your course for the Hoth system", we cut to a Rebel commander instructing two men. The quoted dialogue is: "Group 7 and 10 will stay behind to fly the speeders. As soon as each transport is loaded, Evacuation Control will give clearance for immediate launch". In the background to this, Conceptual Artist Ralph McQuarrie walks by in snow Rebel uniform, carrying his drawing portfolio under his arm.

During many scenes when Han and Luke are on their Tauntauns, the Tauntauns don't leave any footprints in the snow.

When the Empire's ships shoot the first asteroid in the asteroid field, it explodes even before the laser hits it.

When Luke is leaving Dagobah, he uses a ladder to climb up to the cockpit, but when inside, the ladder has dissapeared.

During the escape from Cloud City, watch closely as C-3PO's head strikes a lamp on the hull of the Millenium Falcon and bends it out of shape.

After Chewbacca pulls R2-D2 away from the power socket, he runs away and you can clearly see that he has got white rubber soles under his feet.

In the end credits, Denis Lawson's (Wedge) name is misspelled Dennis. The film makers made the same mistake on Star Wars.

After Luke gets his hand cut off by Darth Vader, look when he is going down the tunnel, you can see his hand is back on.

When Chewbacca enters the junk room in Cloud City to collect the remains of C-3P0, there is a close up of C-3PO's head on the conveyor belt. You can clearly see the reflection of the camera and several members of the crew.

This mistake actually spans from Empire to Jedi... When Solo is frozen in carbonite, he is wearing a untucked buttoned down shirt. But when Leia releases him from the carbonite in Jabba's palace, he is wearing a tucked in double breasted shirt.

When Luke is attacked by the Wampa, the amount of blood changes between shots.

When Luke is hanging in the Wampa's cave at first his feet are wide apart, but then in a close-up shot his feet are close together.

When Luke chops off the Wampa's arm, only half of the arm (hand and elbow) falls on the floor, but when you see the Wampa its arm is cut off at the shoulder. Where has the rest of its arm gone (elbow to shoulder)???

When Han, Lando, Leia and Chewbacca walk through Cloud City, Han starts off on Lando's right side then in the next shot he is on his left side.

When Luke and Vader are having a lightsaber fight in Cloud City, despite lightsabers being able to cut through anything, they seemingly cant cut through Vader's leather suit as luke hits him on the arm.

Some Stormtroopers on Cloud City get shot and yet they don't seem to have any holes blasted in their armor.

When Han, Leia and Chewbacca are in the belly of the space slug, what is keeping them from floating around?? The space slug must have its own gravity.

Keep an eye on the weather on Hoth. It changes from cloudy to clear, back to cloudy and again back to clear.

When they are escaping Hoth, Chewbacca enters the Millennium Falcon, but when Han & Leia enter a few seconds later, Chewbacca is yet again going inside the falcon.

During the battle of Hoth, the Snowspeeders seldom cast shadows on the ground.

When Vader kills captain Needa and two guards come to take him away, it looks like the dead captain gets up almost by himself.
During the surface attack on Hoth, just after Vader appears as an hologram and the guy in the walker says "yes lord vader the shield will be down in moments, you may start your landing" The scene then goes to Luke in his speeder and he his saying "Rogue three" the scene then flick to another guy in a speeder and he says "copy rogue leader" at this point you can clearly see a human hand in the background of the speeder trying to get out of camera.

-Although Gerald wrote in to say:

Snowspeeders are two man crafts so the hand seen behind Wedge Antilles would be the second person who operates the tow cable. This is NOT a goof.
